The other night I tried a new mac and cheese recipe and it is delish!!!!  So creamy and good.  AND it is gluten free so Becca could eat it too.  Double the goodness.  I actually made a double recipe and that is what you see in the photo below.

Macaroni and Cheese

Ingredients

• 1 2/3 cups dry, small elbow macaroni, cooked and drained (I used the a 12 oz.  package GF pasta that I got at Wal-Mart ~ picture below)
• 2 tablespoons cornstarch
• 1 teaspoon salt
• 1/2 teaspoon dry mustard
• 1/4 teaspoon ground black pepper
• 1 (12 fluid ounce) can evaporated milk
• 1 cup water
• 2 tablespoons butter
• 2 cups shredded sharp Cheddar cheese, divided

Directions

1. Preheat oven to 375 degrees F. Grease 2-quart casserole dish.
2. Combine cornstarch, salt, mustard and pepper in medium saucepan. Stir in evaporated milk, water, and butter. Cook over medium-heat, stirring constantly, until mixture comes to a boil. Boil for 1 minute. Remove from heat. Stir in 1 1/2 cups cheese until melted. Add macaroni; mix well. Pour into prepared casserole dish. Top with remaining cheese.
3. Bake for 20 to 25 minutes or until cheese is melted and light brown.

This pasta is the best gluten free pasta that I have found so far.  I would have no problem serving this to others.  Some of the other kinds we have tried are not "company food" but this one is!  Yeah.

This is one of the MANY volunteer plants that we have.  I have no idea what it is.  It looks like a zucchini, but not the shape.  Any ideas?  And that is my foot (which is not small) so you can see the size of it.

These are all volunteers so we are just waiting to see what they are.  The huge thing from above is in that pile of plants.

Becca saw an idea for a 4th of July wreath on a blog the other day.  It looked cute so we gave it a try. It looks great on our front door.

June 15th

A few weeks ago Kevin, Sarah, Zach and I went to Wichita.  We were there to represent TeenPact at the statewide homeschool convention.  It was 2 LONG days on our feet, saying the same thing over and over and over............   But it was worth it.  Now lots more people in Kansas know about TP and that was the point!

These two are the best salesmen for us!  The parents that pass our booth pay much more attention to S and Z than to us.  They like to hear it straight from the horse's mouth, so to speak!

There were a few of these sculptures on the street corners in Wichita. I would have liked to take more photos of them, but it was hard snapping photos as we whizzed by them in the van.  :)

June 1st

Where do I start? I have the best of intentions, but sometimes it is much more fun to look at other's blogs than to work on ours!  So I will just put a few random pics on here.

 This is what happens when your daughter takes your phone and makes goofy faces with it!

 The dog loves to lay in our shower!?!?!?!?!?  Can't figure that one out.

 I love this tree in the spring.  It is not very pretty at other times of the year, but I love it in bloom.

 Sarah and I went to a ladies retreat a few weeks back and I took this photo in the garden of the hotel.
