Today for lunch I made a batch of Lefse. For those of you that have not heard of lefse before ~ it is basically a tortilla made of potatoes. I think it is of Norwegian origin. I remember my mom making them occasionally when I was little. We had some left over mashed potatoes in the refrigerator so we made some. We served them warm with butter and cinnamon & sugar. :)

Oh Kathy, what warm yummy memories you stirred. I remember making and eating these at your house in Germany. I'll have to make some for my girls.
